In celebration of Valentines Day, I thought I’d treat my loved ones to these delicious yet guilt-free pancakes. Perfect for any breakfast-lover without jeopardizing your diet.
Combining egg whites and oatmeal provides the perfect balance of protein and slow digesting carbs to fuel your day.
Get creative with your toppings: maple syrup; nut butters; greek yoghurt and berries for the sweet tooth. For savory options, add a dose of your five a day with sautéed greens in olive oil and garlic such as kale or spinach, fresh tomatoes and guacamole.
Ingredients
- 1 cup egg whites
- 1/3 cup oats
- 1/4 cup unsweetened almond milk
- Topping of your choice (I chose maple syrup and chopped hazlenuts)
Directions
- Grease pan lightly with coconut oil over medium high heat
- Mix all ingredients (except the toppings) in a bowl until thoroughly combined. For smoother pancakes, blend ingredients in a blender for 5-10 seconds.
- Pour mixture into pan to make 3-inch pancakes. When pancake begins to solidify, flip and cook for another 2 minutes.
- Add toppings of your choice. I chose a drizzle of maple syrup and sprinkle with chopped hazlenuts
- Breakfast is served
